Whole Grain Recipes
What recipes contain a lot of fiber? Whole grain recipes of course. Try some new grains that you may never have tried before. Flaxseed Muffins 1 ¼ cup whole wheat pastry flour 3 cups ground flaxseed 1 Tbs. baking powder ½ cup light molasses ¾ cup skim milk (or soy or almond milk) 2 Tbs. canola oil 2 eggs (or ½ cup egg substitute)
Mix flour, flaxseed and baking powder. In a separate bowl stir together wet ingredients. Stir into dry. Put in greased muffin pans or in paper muffin cups. Bake at 350 for 18 minutes. You can also add chopped apple or blueberries to the batter before baking for variety.
Quinoa Pilaf1 cup quinoa 1 cup carrots, chopped ½ cup red sweet pepper, chopped 1 Tbs. olive oil 2 cloves garlic, minced 2 cups chicken broth ½ cup frozen peas Salt and Pepper to taste Heat olive oil over medium heat. Add onion and cook until soft. Add carrots, peppers and garlic. Cook about 5 minutes or until veggies are soft. Add quinoa and chicken broth. Bring to a boil, then reduce heat and simmer, covered, for 20 minutes. All the water should be absorbed. Stir in frozen peas and add salt and pepper to taste. Serves 4.
Buckwheat Pancakes¾ cup buckwheat flour ½ cup oat bran ¼ cup spelt flour 1 Tbs. ground flaxseed 1 tsp. stevia 1 ¾ tsp. baking powder 1 egg 1 ¾ cup skim milk 1 tsp. vinegar 2 Tbs. olive oil In a small bowl mix vinegar into the milk and let set for 5 minutes. In another bowl, mix together the dry ingredients. Add the milk, egg and oil to the dry ingredients and allow to set for 5 minutes. Add more milk if needed for the desired consistency. Ladle the mixture onto a hot, lightly oiled griddle. When holes appear on the surface of the pancakes, turn them to brown the other side. Serves 6
Barley Bread (Good served with soup or salad)3 cups barley flour 1 tsp. sea salt 2 ½ Tbs. baking powder 2 Tbs. honey ¼ cup olive oil 2 eggs 1 cup milk
Mix together the dry ingredients. In another bowl, combined the honey, oil, eggs and milk. Add the wet ingredients to the dry and mix just until combined. Pour into an oiled pie pan. The batter will be very thick. Spread it evenly in the pan. Bake at 350 degrees for 25-30 minutes.
