Quinoa Pilaf

Quinoa is a grain grown in South America. It can be used as a rice substitute. This quinoa pilaf recipe is crunchy and delicious. You can buy quinoa at health food stores. Some larger grocery stores are also beginning to carry it. There are many colors of quinoa, white, red, even black. Each one has it's own flavor. Try several to see which one you like the best.

If the quinoa you purchase is not pre-washed, be sure to wash it before using to remove any bitter taste. Most of the quinoa sold in the United States has been pre-washed.

1 cup quinoa
1 cup carrots, chopped
1/2 cup red sweet pepper, chopped
1 Tbs. olive oil or grapeseed oil
2 cloves garlic, minced
2 cups chicken broth
1/2 cup frozen peas (I use organic)
Salt and Pepper to taste

Heat olive oil over medium heat. Add onion and cook until soft. Add carrots, peppers and garlic. Cook about 5 minutes or until veggies are soft. Add quinoa and chicken broth. Bring to a boil, then reduce heat and simmer, covered, for 20 minutes. All the water should be absorbed. Stir in frozen peas and add salt and pepper to taste. Serves 4.
