Flaxseed Muffins

These flaxseed muffins provide lots of health benefits. Did you know that flaxseed contains lots of beneficial oils, specifically omega-3 fatty acids? You can make a batch of these muffins and freeze them. That way you can just get out a muffin and warm it up for a fresh muffin each day.

To make the muffins you'll need:

1 1/4 cup whole wheat pastry flour
3 cups ground flaxseed
1 Tablespoon baking powder
1/2 cup light molasses
3/4 cup skim milk (or soy or almond milk)
2 Tablespoons canola oil or grapeseed oil
2 eggs (or 1/2 cup egg substitute)

Mix flour, flaxseed and baking powder. In a separate bowl stir together wet ingredients. Stir into dry. Put in greased muffin pans or in paper muffin cups. Bake at 350 for 18 minutes. You can also add chopped apple or blueberries to the batter before baking for variety.

Enjoy these muffins warm or at room temperature. You can buy ground flaxseed (keep it in the refrigerator) or whole flaxseeds and grind your own meal. You can use a coffee or other grain mill.
