Flaxseed Bread


Flaxseed muffins aren't the only way to get flaxseed in your diet. This delicious flaxseed bread contains the same health benefits. Toast it or make into a sandwich. Any way you slice it, this bread delivers healthy omega 2 fatty acids. This recipe makes 1 loaf of bread.

1 1/2 teaspoon active dry yeast
3 Tablespoons honey
1 Tablespoon grapeseed oil (or olive oil)
1/2 teaspoon sea salt
1 cup ground flaxseed
3 cups whole wheat pastry flour
warm water

Dissolve yeast in 2 Tablespoons warm water. Set aside until bubbly, about 5 minutes. In a large bowl mix the honey, oil, sea salt and 1 1/4 cups warm water. Add yeast mixture. Add the flaxseed and most of the flour. Stir until in makes a soft dough. Add remaining flour and knead directly in the bowl. You can add more flour if necessary. Knead until the dough is smooth and elastic.

Grease a 9 x 5 loaf pan lightly with grapeseed or olive oil. Shape the dough into a loaf and place in the pan. Cover and let rise in a warm place until doubled, about 1 hour.

Bake for 40 - 45 minutes at 350 degrees. The bread should be browned on top and sound hollow when tapped. Remove from pan and cool.
