Cruciferous Vegetables

Broccoli, cauliflower and cabbage are all cruciferous vegetables. This particular family of veggies is super high in fiber and other nutrients. Even better, all of them are low in calories so you can eat lots of them without feeling guilty. Just be sure to leave off the cheese sauce.

Broccoli is high in vitamin C, K and A. In fact, broccoli provides twice the US recommended daily allowance of vitamin C. If you don't like citrus fruit, this is a great way to get your C vitamins.

Cauliflower is also high in vitamin C although not as high as broccoli. Cauliflower has almost 100% of the USDA for vitamin C. It is also high in fiber, but again not as high as broccoli. Cauliflower is a wonderful substitute for potatoes. If you are trying to eat a lower carb diet, substitute cauliflower for potatoes in salads, casseroles and even mashed.

Another favorite member of the family is the cabbage. This veggie is high in vitamin K, which helps with blood clotting and helps protect against osteoporosis.

But these aren't the only members of the cruciferous family. There are lots more. One that you may not be as familiar with is Bok Choy. This is sometimes known as chinese cabbage. Bok Choy is also high in vitamin C and vitamin A. You can use bok choy in a salad or cooked like cabbage.

All of this family of vegetables has been credited with lowering the risk of cancer. It would benefit your health to add a serving each day. With so many different cruciferous veggies to choose from, you won't get bored.
