Buckwheat Pancakes


Looking for a nutritious breakfast alternative? Try these buckwheat pancakes for a hearty fiber filled breakfast. Top with fruit for added nutrition and taste. You can purchase buckwheat flour at your local health food store. You may also grind your own buckwheat berries for fresh flour. Check out our nutrition store for a flour mill.

3/4 cup buckwheat flour
1/2 cup oat bran
1/4 cup spelt flour
1 Tablespoon ground flaxseed
1 teaspoon stevia
1 3/4 teaspoons baking powder
1 egg
1 3/4 cup skim milk
1 teaspoon vinegar
2 Tablespoons olive oil or grapeseed oil

In a small bowl mix vinegar into the milk and let set for 5 minutes. In another bowl, mix together the dry ingredients. Add the milk, egg and oil to the dry ingredients and allow to set for another 5 minutes. Add more milk if needed for the desired consistency. Ladle the mixture onto a hot, lightly oiled griddle. When holes appear on the surface of the pancakes, turn them to brown the other side. Serves 6
