Almost everyone has a recipe for broccoli salad. I've included this one because it uses turkey bacon, a healthier alternative to regular bacon. Use low fat mayo for a low fat version of the salad.
If you prefer to eat your foods raw, you can substitute eggplant "bacon" and almond mayonnaise.
1 large head broccoli - torn up
1 medium onion, chopped
1/2 cup raisins
8-10 slices turkey bacon, fried and crumbled
1-cup mayonnaise
1/4 cup raw sugar
2 Tbs. vinegar
Mix broccoli, onion, raisins and bacon together. Mix mayo, sugar and vinegar together. Pour over veggies. Let stand for 1 hour.
This delicious salad is full of fiber and nutrition. Did you know that broccoli provides more than two times the daily recommended allowance of vitamin C? Plus, research has shown broccoli to be one of the good veggies that help guard against cancer.
