Berries and Greens


Try this recipe for berries and greens as a light lunch salad. In addition to their antioxidant properties, berries add a distinctive flavor to salads. You can choose different berries to take advantage of the fresh berries that are in season.


4 cups mixed baby salad greens
1/2 cup blueberries
1/2 cup sliced strawberries
1/3 cup dried cranberries
1/4 cup slivered almonds
4 Tbs. goat cheese, crumbled (opt.)
2-4 Tbs. raspberry vinaigrette salad dressing

Lightly toss the salad greens with the berries and almonds. Drizzle salad dressing over salad and sprinkle with crumbled goat cheese if desired. Serves 4 salad size servings.

Want to turn this into a main course salad? Broil 1 or 2 boneless skinless chicken breast halves. Slice and lay on top of the completed salad. Makes 2 main dish servings.
