Antioxidant Recipes - Berries


Did you know that berries contain a very high concentration of antioxidants? Try these antioxidant recipes to add these important cancer fighting nutrients to your body.

Oatmeal with berries

1-cup oats
3 cups water
1 Tbs. cinnamon
6 oz. vanilla lo-fat yogurt
¼ cup raspberries
¼ cup blueberries
¼ cup blackberries
¼ cup honey

In a large pot, bring water to a boil. Add oats. Lower heat and simmer for 20 minutes. Add yogurt, berries, cinnamon and honey. Stir and let simmer 10 minutes more. 4 servings.




Berries and Greens

4 cups mixed baby salad greens
½ c. blueberries
½ c. sliced strawberries
1/3 c. dried cranberries
¼ c. slivered almonds
4 Tbs. goat cheese, crumbled (opt.)
2-4 Tbs. raspberry vinaigrette salad dressing

Lightly toss the salad greens with the berries and almonds. Drizzle salad dressing over salad and sprinkle with crumbled goat cheese if desired.




Fresh berries

1-cup blueberries
1-cup raspberries
1-cup blackberries
1-cup strawberries
1 cup dried cranberries

Mix together. Use as a snack or sprinkle on cereal or oatmeal.




Fruit Sauce

2 ripe bananas
2 cups strawberries
1 kiwi

Put fruit into a blender and blend to make a sauce. The bananas sweeten and thicken the sauce. You can try other fruits as well. Use on pancakes, etc.
