Broccoli Cauliflower Casserole


This broccoli cauliflower casserole would make a nutritious side dish. Broccoli and cauliflower are cruciferous vegetables. Both are high in fiber and filled with nutrients. So what would be better than a delicious dish containing both of these vegetables. Choose organic vegetables, if possible .

1 Tbs. butter
4 1/2 tsp. whole-wheat flour
1 1/4 cups skim milk
3/4 cup shredded lo-fat cheddar cheese
1/3 cup grated Parmesan cheese
1 package Broccoli florets or small head of broccoli, cut up
1 package cauliflower florets or small head of cauliflower, cut up
1 cup soft whole-wheat breadcrumbs

In a saucepan, melt butter. Stir in flour until smooth. Gradually add the milk, stirring constantly. Bring to a boil and stir for 1-2 minutes. Remove from heat and add cheeses. Stir until melted. Put veggies in a buttered baking dish. Pour sauce over them. Top with breadcrumbs around the edge of the dish. (I used 2 slices of whole wheat bread, cubed and sprayed with butter flavored grapeseed oil.)Bake for 25-30 minutes at 350.

The veggies are crisp tender and the casserole is delicious. As an added bonus, it is lower in fat than most cheese topped vegetable dishes.
